How does SNOO know if baby is sleeping?

The Snoo is a very smart prop. When baby inevitably wakes up in the middle of the night (as all babies do), the Snoo detects crying with microphone sensors and adjusts the intensity of the white noise while gradually increasing motion.

Does SNOO automatically adjust?

If the crying continues, SNOO will go slightly faster and louder. The bed will move through 4 levels of higher sound/motion, until the fussing stops or SNOO automatically stops. As you continue to push, the button will change color and SNOO will go to the next level.
