How can I tell what size PEX pipe I have?

PEX tubing sizes are denoted by CTS (copper tubing size), not OD (Outside Diameter) or ID (Inside Diameter). OD of PEX, copper and CPVC pipe with the same size (CTS) is the same. This is why push fittings can be used with all of these pipes.

Is it better to bend PEX or elbow?

Use PEX bend supports instead of elbows. While these, unlike elbow fittings, cannot provide a sharp turn, they are suitable for most frame homes and will provide a certain degree of protection for the pipe from rigid/abrasive stud edges.
