Do GreenPan handles get hot?

The handle does get hot, & a sleeve takes care of that. However, it does tend to tilt it a little up off the burner, so for even heat, leave the sleeve off until you’re ready to lift the pan. Usually, by the time you have some food actually cooking in it, that will hold the pen flat even with the sleeve on it.

Can you use coconut oil on GreenPan?

Yes, we recommend using a little oil or butter for flavor. Some oils can go higher in temperature – for example, coconut oil is ideal to use on GreenPan™. Because of the excellent heat conductivity of GreenPanTM and the Thermolon™ layer, food and oil can carbonize very rapidly.

Why can’t you use olive oil in ceramic pans?

Extra virgin olive oil is not usually recommended, as it can leave a thin carbonized layer on the ceramic pan due to the oil’s inability to withstand high temperatures. By avoiding extra-virgin olive oil, you reduce the potential for a dulling layer that could interfere with the natural non-stick properties of the pan.
